Quinoa Bowl with Lime

I hope you enjoy this light and refreshing recipe with a warm touch to round out the summer.

1. Cook quinoa (let 2 cups of water boil, add 1 cup of dry quinoa, let simmer with the lid on for about 15 minutes or until all water is absorbed)

2. 1/2 cup chopped red pepper

3. 1/2 cup black beans

4. 6 red potatoes, panfried or cooked to your liking

5.) Cilantro to garnish (chopped)

For The Dressing...

1.) 3 tbsp. lime juice

2.) 1 tbsp. lemon juice

3.) 3 tbsp. apple cider vinegar

4.) 2 tbsp. red wine vinegar

5.) 1/2 tsp. salt (add more if you'd like)


While the quinoa is cooking, chop your vegetables, and wash the beans.

Pan fry, bake, or boil the potatoes until they are tender.

Combine all ingredients into the cooked quinoa.

Mix together all dressing ingredients and pour over the quinoa.

Stir together the entire to mix to make sure every bite is delicious.
