Almond Butter Mulberry Mounds
a busy snack for busy people
Recipe Tip: You can completely "eyeball" this recipe. Just add as much almond butter and almond milk as you need to make everything come together. Depending on how "hefty" your measurements are, you might need to add more of certain ingredients.
1/2 cup chopped mulberries
1/2 cup quick oats
1/2 cup rolled oats
1/2 cup granola (Vanilla or any Harvest flavored granola is delicious)
1/2 cup almond butter
1/4 cup raisins
1/4 cup pumpkin seeds or sunflower seeds
1/2 cup almond milk
1/4 cup lite agave syrup (any syrup to help bind the mix)
Cinnamon, a few dashes
Himalayan Sea Salt, to taste
4 squares of a dark chocolate bar (I used a Dark Chocolate Sea Salt with Almonds Bar), finely chopped
A medium handful of ground flax seeds
2 packets or 1.5 tsp. of Stevia
2 tbsp. Finely shredded coconut
1.) Combine the ground flax seeds, stevia, a little salt, and coconut in a bowl and put aside.
2.) Combine all of the other ingredients in another mixing bowl and mash the entire mix together with the back of a spoon or your [clean] hands until the batter is blended all together. (Add some salt to this batter as well)
3.) Form the batter into the mounds you see in the picture to your left.
4.) Roll each mound in the ground flax, stevia, salt, and coconut mix to coat the entire mound.
5.) Place the mounds on a plate with nonstick paper or plastic wrap.
6.) Set them in the refrigerator for 20 to 30 minutes.
7.) Get yourself ready for the day and don't forget to bring these little bites with you!
