Apple & Butternut Squash Harvest Bowl

This bowl is everything I love about fall recipes. The warm and sweet yet savory flavors all come together in one bite. This bowl is sure to keep you and your guests warm during this cold season and it doesn't take much! Follow the recipe and you will see how easy it is to have a crowd pleasing dish on your table this Thanksgiving.

 

Ingredients

1. One medium butternut squash, peeled and cut into 1 inch pieces.

2. Half of one red onion, sliced in half circles.

3. One or two apples cut into bite size pieces.

4. Pumpkin spice to taste

5. Salt to taste

 

  1. Pre-heat the oven to 430 degrees.

  2. Cut the butternut squash into equal sizes.

  3. Spread them on a on-stick baking sheet and toss them in a few pinches of salt and pumpkin spice.

  4. Cook them in the pre-heated oven for 30 minutes or until browned.

  5. Heat a pan over medium heat and caramelize half an onion. 

  6. Once the onion is almost done add in the apple and cook until the apple is to your liking (some may like the apple more tender, some may want to only heat it while keeping it crisp)

  7. Once all the ingredients are cooked, add them all to a bowl, toss with a bit more salt and pumpkin spice or cinnamon if you would like, and enjoy!
