Looking at the ingredient label for store bought macaroni salad was FRIGHTENING. Sometimes it's easy to assume that something "local" must have fresh ingredients. But that isn't always the case. Remember to check ingredient labels no matter where you are because no one cares about the food that goes into your body as much as you do! With all that being said, this new recipe will make you feel like you're indulging in any old pasta salad, but nope! It is full of fresh plant based ingredients that you can trust and feel great about.
Macaroni whole wheat pasta, 5 cups cooked and cooled
1 Medium carrot, peeled and finely diced
2 celery stalks, finely diced
1/4 cup sweet onion, finely diced
Vegan mayo, 1 cup
Garlic powder, 1 tsp
Salt, to taste
Black pepper, 1/4 tsp
Lemon juice, 1.5 tbsp
Organic sugar, 1/2 tbsp (add more if you'd like)
1. Add all of the dry ingredients to a bowl and toss.
2. Whisk together all dressing ingredients in a separate bowl.
3. Combine the dry and the dressing ingredients and that's it!
